Heart Healthy Dried Fruit Scones

Whenever I usually go to my favorite coffee shop, Java, I often get a scone. Their scones are these cakey, mounds of art. They have flavors like orange walnut and maple bacon. Can you say YUM?
Sometimes, though, you just need something light. Something that when you stand up, you don't have to unbutton your pants. This scone is not only light, but is loved by your taste buds as well.


Yeah, I could probably eat one of these everyday for the rest of my life.


The name of these scones is not a lie. As you can see, there is plenty of dried fruit along with fresh.








Not a scone without glaze!

Heart Healthy Dried Fruit Scones
(Adapted from Flour)


Scones:
2 1/2 cups all-purpose flour
1/3 cup sugar
1 tablespoon baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 cup dark raisins
1/4 cup golden raisins
1/4 cup dried apricots, chopped
1/4 cup dried apples, chopped
1/4 cup dried cranberries
3/4 cup fresh strawberries, chopped
2 eggs
1/2 cup cold, plain, nonfat yogurt
1/2 cup cold, nonfat buttermilk
1/4 cup canola oil

Directions:
1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
2. In a medium bowl, sift together all of the dry ingredients. Add all of the fruit, mix.
3. In a small bowl, wisk together the eggs, yogurt, buttermilk, and oil. Pour the wet ingredients into the dry and gently fold together. Fold until the flour is all mixed in and you have a soft dough.
4. Using a 1/2-cup measuring cup, dropped 8, 1/2 cup mounds onto the prepared baking sheet, 2 to 3 inches apart.
5. Bake 40 to 45 minutes, or until the scones are golden brown along the edges and golden in the center. Cool for 30 minutes.
6. Once cooled, top with glaze and let set for 10 to 15 minutes.

Vanilla Glaze:
1 cup powdered sugar
1/4 tsp vanilla
2 to 3 tablespoons water

Directions:
1. Wisk together the sugar, vanilla, and water until you make a smooth, pour-able glaze.
