Tiramisu Cake

Each year my mom usually gets a red velvet cake for her birthday, not this year! I've been wanting make this cake for a while now, so I told my mom this was what she was getting. Lets just say she had no complaints!

Hmm... mascarpone cream!


Careful when cutting this cake into layers. I would recommend slicing the knife into one side, then rotate. This will give you an even cut.


Soaking the layers with coffee and coffee liquor...


... and covering with the cream. : )


Yeah, who needs decorations?


Well, my mom does. Haha. I swear my mom does not eat any dessert unless there are sprinkles on it. I was trying to tell her how I was going to decorate the cake, and she said, "Sprinkles, right?"

Tiramisu Cake
(Adapted from The Golden Book of Baking)

Cake:
1/3 cup all-purpose flour
1/3 cup potato flour
5 large eggs, separated
1 cup + 1/4 cup powdered sugar
1 teaspoon vanilla
1 teaspoon lemon juice

1/3 cup coffee
1/3 cup coffee liqueur

Directions:
1. Preheat oven to 350 degrees. Prepare a 9 inch cake pan.
2. Combine the two flours in a small bowl.
Using a hand mixer, beat the egg yolks, 1 cup powdered sugar, and vanilla until pale and creamy.
3. Using a stand mixer, beat the egg whites until soft peaks form. Add the remaining sugar and lemon juice and beat until stiff peaks form.
4.Fold a quarter of the egg white mixture into the yolks. Fold in all of the flour. Fold in the remaining egg whites. 
5. Spoon into a pan and bake for 35 minutes or until golden.
6. Let cool completely. Cut horizontally into 3 layers. Soak each layer with coffee/liqueur, then top with cream. Stack to make a 3 layer cake.

Marscapone Cream:
1 1/4 cup whipping cream
5 tablespoons powdered sugar
1 1/4 cup mascarpone
1 teaspoon vanilla

Directions:
1. Whip the cream and powdered sugar until soft peaks form. Add the mascarpone and vanilla, beat until combined.
