Brown Sugar, Apple, and Bacon Pop Tarts

On my 16th birthday, I danced in the parking lot of a home depot to Good Feeling by Flo Rida and ate cake batter pop tarts. You can say it, I'm a freak. But it's whatever...
On the pop tart topic, though, lets just say that these were amazing. Everything you want during breakfast in one little pocket of dough. Bacon, apples, cream cheese... are you drooling yet?


My parents say that getting this covered cake stand was the worst thing I ever did. They say that it draws their attention strait to my baked goods. Mission accomplished.



Unless you have free range organic chicken eggs, don't expect your dough to be so yellow. The extreme orange of my chickens' eggs tend to be misleading when it comes to people trying to recreate my recipes.



Apples and brown sugar? I'm in.



Don't judge, I know it looks a little gross right now, but you'll see.



Perfect rectangles, I think not. Just get as close as possible.



The thicker the pop tart, the better!



What, now they have to bake? But I'm hungry!



No such thing as a pop tart without glaze!


And my touch: Raw Sugar



Okay, yum. I can see why that cake stand was a bad idea... I had more than one of these. They just kept calling my name...


Brown Sugar, Apple, and Bacon Pop Tarts
(Adapted from Flour)


Pate Brisee:
1 3/4 cup all-purpose flour
1 tablespoon sugar
1 tsp salt
1 cup unsalted butter, cold and cut into 12 pieces
2 egg yolks
3 tablespoons cold milk

1 egg


Directions:
1. Using a stand mixer fitted with the paddle attachment, combine the flour, sugar, and salt on low speed for 15 seconds.
2. Scatter the butter over the top and mix on low for 1 1/2 minutes.
3. In a separate bowl, wisk together the egg yolks and milk. Add to the flour/butter mixture all at once. Mix on low speed for 30 seconds.
4. On a floured surface, work the dough until no longer gooey. Wrap in plastic and place in the fridge for 4 hours before use.
5. Preheat oven to 350 degrees. Remove dough from fridge. Roll out into 16 equal rectangles.
6. Place on tray, score each bottom rectangle with a knife, brush with egg. Place a tablespoon of cream cheese, spread. Add a heaping tablespoon of the apple/bacon mixture. Cover with top rectangle and seal.
7. Bake 35-40 minutes. Cool. Cover with glaze.

Apple/Bacon Filling:
6 slices pan cooked bacon (keep the grease)
2 granny smith apples, peeled and cut into small cubes
1/2 cup light brown sugar
1 egg
1/2 tsp cinnamon
1/2 cup all-purpose flour


Directions:
1. Cook bacon in a pan.
2. Place 3 tablespoons of the bacon grease in the bottom of a medium saucepan. Over medium heat, add apples. Cook, tossing, 3 to 4 minutes. Add the brown sugar. Cook another 3 to 4 minutes, tossing.
3. In a bowl, mix apples and bacon, drain juices. Let cool to room temperature.
4. Add the egg, cinnamon, and flour to the apples/bacon mixture.


Sweetened Cream Cheese:
8 ounces cream cheese
1 tablespoons sugar


Directions:
1. Cream the sugar and cream cheese until smooth.


Glaze:
1 cup powdered sugar
2 tablespoons plus 2 tsp water
1/4 tsp cinnamon


Directions:
1. Combine the three ingredients in a small bowl until a spreadable glaze forms.
