Bittersweet Hazelnut and Cranberry Granola

Chocolate and granola, a match made in Heaven. We don't always think of chocolate as healthy, but when it is dark chocolate cocoa powder... well that's a different story.


I love snacking on granola. You can have it as a meal with fruit and yogurt or just eat it strait from the bag!



Honey and syrup may be high in calories, but they have ZERO FAT.



Those round pearls you are seeing, yeah, those are WHOLE hazelnuts. Can you say yum?



Bittersweet Hazelnut and Cranberry Granola


6 cups old-fashioned rolled oats
1/2 tsp salt
1/2 tsp ground nutmeg
1 tsp cinnamon
3 tablespoons dark chocolate cocoa powder
1 cup dried cranberries
1 cup whole hazelnuts
3/4 cup maple syrup
1/4 cup honey
1 tsp vanilla

Directions:
1. Preheat the oven to 325 degrees. Line a baking sheet with parchment paper.
2. In a large bowl, mix together the oats, salt, nutmeg, cinnamon, cocoa powder, dried cranberries, and hazelnuts.
3. In a sauce pan, heat the syrup, honey, and vanilla over medium heat until hot. Add to the oats mixture and stir to combine.
4. Place the granola on your baking sheet and bake for 20 minutes. Remove from oven and mix once more for even distribution. Place back on the sheet and bake for another 20 minutes. Let cool.
