Strawberry Shortcake Ice Cream

Have you ever seen that show Strawberry Shortcake? Yeah, me neither. But I have eaten it, well, the dessert version...




It's kind of fun to convert cakes into ice cream. I mean, what goes best with cake? That's right, ice cream. Why not put the two together?



A simple cake.



Turning into something not so simple.



Place into a simple vanilla ice cream...



... with some simple smashed strawberries. Do you see where this is going?



Bam! Extraordinary!



Extraordinaryily delicious...


Strawberry Shortcake Ice Cream
(Adapted from Ben and Jerry's and The Golden Book of Baking)


Cake:
1 1/2 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup butter, softened
1 cup sugar
1 tsp vanilla
1/2 tsp almond extract
2 eggs
1/2 cup milk


Directions:
1. Preheat the oven to 350 degrees. Prepare a 7 x 11 pan.
2. In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Whisk to combine.
3. Using a stand mixer fitted with the paddle attachment, beat the butter, sugar, vanilla, and almond extract on medium speed until creamy (2-3 minutes.) Reduce the speed to low and add the eggs, one at a time, until combined after each addition.
4. Add in the dry ingredients, a little at a time, until completely combined.
5. Spoon the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool.
6. Cut into 1 inch cubes, place into a freezer bag, and freeze.


Strawberry Swirl:
2 cups chopped strawberries
1/4 cup honey
Pinch of Salt


Directions:
1. In a small bowl, smash together the strawberries, honey, and salt.


Ice Cream:
2 eggs
3/4 cup sugar
2 cups whipping cream
1 cup milk
2 tsp vanilla


Directions:
1. Using a stand mixer fitted with the paddle attachment, beat the eggs on medium-low speed until light and fluffy (1-2 minutes.) Add the sugar in a little at a on low speed until completely combined. Increase the speed to medium-low again and mix for 1 minute.
2. Add in the cream, milk, and vanilla and mix until until combined.
3. Freeze according to your ice cream maker's instructions.
4. In a bowl, add the frozen cake pieces and mix. Add to your ice cream container or a seal able bowl alternating with the strawberry mixture. Freeze.
