Coconut Petit Fours

Last year on Easter, I tried to make a coconut cream pie. The key word is tried. It was an epic fail.

I blaim the recipe.


This year I went a different route. Pies aren't my thing, but cake is!


Plus, I got chicks!... and baby ducks!

Coconut Petit Fours
(Adapted from Flour)

Cake:
2 1/4 cups cake flour
1 1/4 cups sugar
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup (1 1/2 sticks) unsalted butter, room temperature, cut into pieces
6 egg whites
1 cup coconut milk
1 cup sweetened shredded coconut
1 vanilla bean, split lengthwise
Directions:
1. Preheat the oven to 350 degrees. Prepare a petit four pan or a 13 x 9 pan.
2. Sift the cake flour into the bowl of a stand mixer fitted with the paddle attachment. Add the sugar, baking powder and salt. Combine for a few seconds, setting the mixer speed on low. Add the butter and beat for about 1 minute, until coarse and crumbly.
3. Combine the egg whites, coconut milk, and 1 cup shredded coconut in a medium bowl. Scrape the vanilla bean seeds into this mixture.
4. Add half of the coconut milk mixture to the flour mixture and beat on medium-high until combined, about a minute. Stop the mixer and scrape down the sides of the bowl. Add the remaining wet ingredients at beat for 30 seconds, until the batter is light and fluffy. Place the batter in your prepared pan.
5. Bake for 35-45 minutes (if using a 13 x 9 pan) or 15 minutes (if using a petit four pan) or until the tops are firm and golden. Cool.
6. Drizzle the melted chocolate over the top.

Colorful White Chocolate Drizzle:
1 bag white chocolate chips
1/4 cup coconut milk
Food Coloring

Directions:
1. In a boil over steaming water, melt the chocolate with the cocnut milk until smooth, stirring.
2. Divide the melted chocolate into thirds and place a few drops of coloring in each. Stir to combine.
